I first discovered Avocado Mash Toast when Scott and I toured Australia, for a month. For about 22 USD you could enjoy this delightful treat for brekkie, lunch or a midday snack. Our Aussie friends top their avocado mash toast with crumbled feta cheese and a splash of fresh squeezed lemon juice.
Fast forward to last fall – Scott and I traveled to London for a week-long vacation to see our friend, Stephanie. What do you know? They had their own version of Avocado Toast. Our London friends were even more creative and added an over easy egg, arugula, crumbled feta cheese and fresh squeezed lemon juice. This delightful treat cost about 11 USD.
Back in the US.A., I have created our own classic version of Avocado Mash Gluten-Free Toast, for our South Florida home. It’s simple, but follow closely. I toast a couple of slices of Udi’s Gluten-Free Delicious Multigrain Bread. While the gluten-free bread is toasting, I slice a freshly washed avocado in half. After removing the seed, I mash the avocado goodness using a fork, in the shell of the fruit. After the gluten-free toast is perfectly crisp, I add the mashed avocado to each slice of gluten-free toast. After squeezing some fresh lemon juice to each, I add a super secret spice. Are you ready for this? I sprinkle Olde Thompson’s Everything Bagel Seasoning on top. Try this delightful treat at home for less than 3 USD, when avocados are in season.
Avocados are really good for you. They are a good source of 20 vitamins and minerals, low in sugar and contain fiber.
Ready for a fun fact about avocados? Avocados are actually a berry! Why are they considered a berry? Because the pulp of the avocado is fleshy and includes a seed. I know, I was just as surprised as you.
